Woodwater Distillery Pty Ltd. emerged and became a registered business in 2016, under the ownership and operation of Justin Mok. With a deep-rooted passion for whisky spanning over two decades, Justin was captivated by the notion of creating his own spirits.

This journey of distillation has evolved into an enduring love affair, fueled by a dream and unwavering commitment to craft premium South Australian Single Malt Whisky and exceptional spirits. Woodwater takes pride in sourcing the finest local ingredients and materials to meticulously create its distinctive and refined spirits.

Two Accents Gin

In 2015, during their honeymoon in Kentucky, John and Emily were inspired by a visit to Wild Turkey Distillery and dreamed of starting their own distillery back home. The pandemic in 2020 gave them the opportunity to learn the craft, and in 2022, they launched River’s Edge Spirits. With a focus on local ingredients and the charm of their hometown, they aim to showcase their region’s best through their premium spirits. While currently in a production-only phase, they have big plans for a future distillery space that celebrates their passion for craft spirits and their community.

Twin Bridges Distillery

In 2015, during our honeymoon in Kentucky, fate led us to meet the legendary Jimmy Russell, head distiller of Wild Turkey. Inspired by the experience and captivated by the idea of creating something similar back home, we knew we had to embark on our own distilling journey.

The global pandemic gave us the unexpected opportunity to delve into the art of distilling. While locked away in a hotel for two weeks, we started learning with the help of The Distillers Institute. Despite the challenges and the need for significant funds, we were determined not to let that deter us.

In 2022, armed with our carefully crafted recipe and some stock, we took the plunge and launched our venture. Our mission is to showcase the best of our region, from its abundant produce to its rich history. The labels on our bottles proudly feature a local photograph, highlighting the scenic beauty of our town, its river, and the iconic bridges. Mypolonga fruit lends its delightful citrus touch to both the distillation process and the serving of our drinks.

Currently, we are in the production-only phase, requiring prior contact for any visits. However, we envision a future where we can welcome you to a place that beautifully showcases everything we do. With passion and determination, we aim to bring the essence of our region to your glass and create an unforgettable experience for all who visit.

Three Little Birds Distilling

In 2019, the vision for Three Little Birds Distillery took flight, born from the dreams of a husband and wife duo. In 2021, their aspirations took shape as construction began on their Macungie, PA location. With their three kids as inspiration, the distillery opened its doors in 2022, housed within a historic 115-year-old barn.

The founder, Gregory Smith, carried forward his successful journey from the sister company, Hop Hill Brewing, into this new venture. Committed to using only the finest ingredients, Three Little Birds Distillery boasts a diverse range of spirits, including whiskies, vodka, rum, gin, brandy, and moonshines.

Once a livestock auction facility, party rental space, and storage for an old restaurant, the barn now stands as the heart of the distillery. Boasting approximately 1700 sq ft of indoor seating and an attached 3000 sq ft deck, guests can revel in the serene view of the 1.5-acre green space alongside the picturesque Little Lehigh Creek. Threefold Distilling

Sunny Hill Distillery

Sunny Hill Farm, settled in 1872 by the Colliver family, remains in their care today. Sam Colliver and his wife Olivia, as the founders, owners, and operators of Sunny Hill Distillery, carry on the family legacy.

The farm serves as a cereal cropping venture, with part of the grain used in crafting quality craft spirits at the distillery. Wheat from the farm becomes the foundation for vodka production, which is then transformed into gin and liqueurs. Barley is employed for whisky, and every drop of rain is collected for production, backed by a 5kw solar system and plans for complete solar and battery independence. Sustainable practices extend to managing liquid waste with an evaporation pond and recycling spent grain for local pig farming.

In addition to vodka, gin, and liqueurs, the distillers lay aside casks for aging, using barley from the farm. The barley is malted at Barossa Valley Craft Malt before returning to the distillery for mashing, fermentation, and distillation, maturing for a minimum of two years. Even rum production has begun, sourcing molasses from Queensland due to the lack of sugar cane on the Yorke Peninsula. At Sunny Hill Distillery, tradition meets innovation, creating a delightful range of spirits that honor their rich heritage.
