Wandering Distillery is a small, family-owned craft distillery that originated in Mount Eliza on the Mornington Peninsula before finding its home in Perth, Western Australia. Despite being nano or maybe even pico in size, they believe that being small doesn’t compromise the quality of their spirits.

Led by their distiller, Wade, whose name means “wanderer,” the distillery draws inspiration from his life of exploration, both in Australia and overseas. Wade’s adventurous spirit, along with his marriage to an English woman from Bolton (home of the Wanderers football team), led to the perfect name for their distillery – Wandering Distillery.

At Wandering Distillery, they take their craft seriously, producing beautifully crafted gins and vodkas using organic and locally sourced botanicals, some of which come from their own backyard. The West Winds Distillery, founded in 2010, is a spirited crew of loveable larrikins who embarked on a journey to showcase the unique botanicals of Australia to the world. Overcoming challenges and navigating choppy waters, they created a distinct family of Australian spirits that have received accolades and awards.

Their dedication to perfection led to the development of their first two gins, The Sabre and The Cutlass, after a year of tinkering and 45 distillations. The efforts paid off when Cutlass became the first Australian spirit to win a Double Gold at The World’s Most Recognized Spirit Competition in San Francisco, followed by a Gold for Sabre just three weeks later.

The Great Northern Distillery, located near Perth, operates two distinctive stills – pot stills and column stills – allowing them to produce a diverse range of Irish Whiskey spirits, including Grain, Triple Malt, Double Malt, Peated Malt, and Pot Still Whiskey. With a capacity of 16 million liters of Whiskey spirit, the distillery also operates a small-scale Gin still. The first 3-year-old matured Irish Whiskey produced at the distillery reached maturation in 2018.

The distillery primarily caters to bulk private labels, contract distilling, retail own label, and supplies spirit and whiskey to smaller distilleries in both domestic and international markets. Notably, the Irish Whiskey Market is currently the fastest-growing brown spirit in terms of sales worldwide.

The Great Northern Distillery is a private company founded by owners who previously established the Cooley Distillery and rebuilt the Kilbeggan Distillery, both of which were sold in 2012. With their expertise and experience, the Great Northern Distillery continues to contribute to the growing Irish Whiskey industry.

Tattarang Springs Distillery is a small batch distillery located on Tattarang Farm, a 120-acre property at the southern tip of Western Australia’s Darling Scarp. Surrounded by breathtaking bushland and winding rivers, the farm serves as the distillery’s backyard, providing a rich source of wild and native botanicals.

Led by a team of experts, including a Distiller, a Chef, and a Horticulturalist, the distillery follows a true grain-to-glass philosophy. They take pride in foraging, growing, and crafting the majority of the ingredients used in their gins and vodka on-site.

Their approach to distilling is traditional with a West Australian twist. They source pure spring water from the local springs and carefully forage for unique botanicals, including blossoms from dark red marri gums, wild aniseed, lavender, and bush lemons.

The distillation process is done in small batches with great skill and attention to detail, ensuring the flavors of the botanicals and their fresh perfumes are released with every pour. The result is a unique and aromatic gin that captures the essence of the surrounding natural landscape.
