The idea of starting a distillery resurfaced in 2014 after tinkering with a homemade still. A visit to Tasmania opened our eyes to the possibility of pursuing this passion on a slightly bigger scale. Since then, it’s been quite a journey, as we’ve built a distillery from the ground up while juggling the responsibilities of a growing family. We’ve dedicated countless evenings and weekends to make this dream a reality and now have a space that can accommodate our two modest stills, allowing us to craft the beverages we adore. Over time, we’ve proudly crafted our signature gin, along with delightful creations like limoncello and coffee liqueur. But we don’t stop there. We’re constantly pushing boundaries and expanding our repertoire by experimenting with new ingredients and blending flavors and aromas to bring forth the next generation of tantalizing drinks.

The distillery is located in the beautiful and cool Southern Highlands Region of New South Wales, Australia. They believe in using traditional methods and getting their hands dirty to create the most exceptional spirits in traditional pot stills. Australia’s climate is perfect for growing some of the best grapes, grains, and incredibly aromatic botanicals and citrus fruits in the world.

They take the finest wine and distill it with care to make a fragrant Eau de Vie spirit that will age gracefully into Brandy. When it comes to Whisky and Baijiu, they take the highest quality Australian malted grains and carefully mash them to create flavorful spirits. And for their Gins, they only use fresh Australian citrus and the best botanicals, both from Australia and imported. All in all, this distillery is all about using the finest ingredients and time-honored techniques to produce spirits that are truly exceptional.

Archie Rose Distilling Co.

Archie Rose opened a new, innovative distillery in Botany and Banksmeadow, Sydney, in 2020. Designed by founder Will Edwards and Master Distiller Dave Withers, it emphasizes the importance of malt in whisky production and individual botanical distillation. The new facility enables expanded processes developed over six years at the original Rosebery site. It features a centralised bond store, a dedicated drinks lab, and advanced energy efficiency measures reducing usage by 30%. Spent grain, botanicals, and pot ale are recycled. The increased production scale allows Archie Rose to showcase Australia’s ingredients and distilling innovation to the world, offering quality, local spirits.

Achilles Gin / Styx Brewery

Styx Brewery was established in an old coal testing facility situated in Carrington. The brewery got its name from the creek in Newcastle NSW, which leads to the old gasworks. This creek, known as the River Styx in Greek Mythology, serves as a connection between our world and the underworld. In Greek mythology, one must pay the Ferryman, named Charon, to cross the Styx.

At Styx Brewery, a scientist and a baker joined forces to create some truly remarkable brews for everyone to enjoy. They focus on producing high-quality, small-batch beers using a small 300L system, which they share with the local market. In July 2018, they sold their inaugural keg, which received rave reviews and strong support from the local community.

Currently, Styx Brewery offers two core beers: an IPA and a Pale. However, they are always experimenting and coming up with new, limited release beers. They place great importance on using seasonal ingredients and locally sourced produce for these small-batch brews. Styx Brewery strictly adheres to using only the essentials of beer-making: hops, malt, yeast, and water. They do not include any preservatives or additives in their brews. Overall, Styx Brewery is a laid-back and personable establishment, dedicated to producing exceptional beers for their customers to enjoy.
