Demoiselle Distillery, established in 2012, is an Australian distillery located on the Barrington Coast NSW. They specialize in creating Absinthe, Gin, and other unique small batch spirits. One of their unique aspects is that they grow their own botanicals, including wormwood (Artemisia absinthium and Artemisia pontica), for their Absinthe and Gin. They also utilize the fruit trees on their property to make small batch gins. At Demoiselle Distillery, they take pride in crafting both Traditional French and modern Australian style absinthe. Both versions contain the essential ‘holy trinity’ of absinthe herbs: aniseed, fennel, and wormwood. The French style is made just as it was in mid 1800’s France, using the original botanicals. Their classic gin has been recognized for its excellence. In the 2020 Australian Gin awards, it won a silver medal in the highly competitive Classic Dry Gin category, surpassing 250 other entrants. Their state-of-the-art distillery houses custom-made glycol-cooled fermenters with over 3000 liters of fermenting capacity. These feed into two unique eight-plate bubble cap column stills, specialized for producing a remarkably pure spirit. The distillation process involves blending the low-wines from the first run and passing them through a smaller 250-liter spirit still for the next phase of distillation. The final cut, or the hearts of the run, are proofed down to 40% with pure filtered water and then aged to create their distinct Vodka.

Cape Byron Distillery, founded by Pam and Martin Brook, started as a rundown dairy farm in 1988. They transformed the land by planting over 35,000 subtropical rainforest trees, creating a haven for birds and wildlife. Their Brookie’s Byron Dry Gin uses 25 botanicals, with 17 locally sourced, including many from their own rainforest.

The Northern Rivers’ subtropical rainforest is a treasure trove of unique edible native species and botanicals, perfect for crafting a world-class gin. Each season brings new flavors, from spring’s flowers and Native Raspberries to summer’s harvest of native Jerseyana Davisonia Plum, a key element in their Slow Gin. Cape Byron Distillery is situated at the heart of the ancient Big Scrub, formed by a volcanic eruption around Mt Warning millions of years ago. Sadly, the rainforest has drastically reduced over time, with only 1% remaining today. To preserve and restore the rainforest, Cape Byron Distillery proudly supports the Big Scrub Landcare (BSL) group, with Martin Brook (Brookie) serving as Vice President.
