Nestled on their Upper Sturt property, HillTilly crafts small-batch gins and vodkas using solar power and pure Adelaide Hills spring water. Their signature spirits are made with only the finest ingredients, sourced locally and organically whenever possible, showcasing the flavors of each season.

Since their official establishment in July 2021, HillTilly has been making a mark in the craft distillery scene, frequenting local markets with their stall and offering free tastings to eager visitors. Although they don’t have a cellar door just yet, their warm hospitality and delightful spirits make any encounter with HillTilly Distillery a memorable experience. Nestled on Maude Street in Encounter Bay, right by the Great Southern Ocean, Henry Fisher Distillery is a haven for premium small batch spirits. Founded by Lachlan Henry Fisher Rochfort in late 2020, the distillery boasts a growing range of world-class spirits. From Citrus, Dry, and Shiraz Gin to Vodka, Spiced Rum, and their first Single Malt Whisky, each offering is a testament to their dedication to using the finest, fresh Australian ingredients available.

At Happenstance Distillery, crafting the perfect signature gin is a labor of love and friendship. Bursting with flavors and guided by a supportive network of family and friends, each batch is meticulously created in their alembic copper still. From selecting ingredients to bottling, Happenstance takes pride in personally overseeing every step of the process, ensuring a gin that keeps you coming back for more.

Craig and Bec, a passionate husband and wife team, are the driving force behind Ginny Pig Distillery. Located in Tooperang on the scenic Fleurieu Peninsula in South Australia, they have transformed their property into an artisanal gin haven.

Former nurses with nearly 50 years of combined experience, their love for gin making emerged as a creative outlet. Inspired by Bec’s obsession with hot cross buns, they embarked on a self-taught journey to master distillation. Their hot cross bun gin became an instant hit among family and friends, and the limited edition Hot X Gin is available from March.

In addition to the Hot X Gin, their Christmas Gin infuses the nostalgia of Grandma’s Christmas pudding and is available from November. The distilling journey started small but blossomed with Bec’s participation in the “Fundamentals of Spirit Production” course at the University of Adelaide.

Their beloved small copper alembic still, Harriett, serves as the starting point for their meticulously crafted recipes. With unwavering dedication and attention to detail, they fine-tune their gins until they meet their high standards. Murphy and Pippa, their faithful distillery dogs, keep watch over the magic.

Ginny Pig’s commitment to quality and artisanal production has earned them recognition, including the “Best Overall” gin award at the San Francisco World Spirit Awards in 2023. Their gins are a testament to their passion and expertise, and they invite you to experience the artistry of Ginny Pig Distillery.

At their Hydrogen fuelled Gin Distillery, the team firmly believes in a hydrogen-driven future, witnessing its efficacy firsthand. With a passion for their craft and an artisan approach, they create premium Australian Gin, emphasizing quality and sustainability.

By utilizing solar and battery power to operate their cooling systems, they proudly remain off the grid and committed to eco-friendly practices. Nestled in the picturesque Barossa Valley, they are driven to protect their home and the environment at large by adopting green energy technology.

Led by founder Brett Durand, their mission extends beyond crafting exceptional gin. Devine Intervention Distillery, a family-owned and operated craft distillery since 2007, takes pride in producing award-winning small batch spirits. At the heart of the distillery is Brünhilde, a German-made hybrid copper pot still. Infusing every drop with her unique character, she empowers their distillers to create a diverse range of product styles.
