Meet Sue and James Tilly, the passionate duo behind HillTilly Distillery. Based in the picturesque Adelaide Hills, they embarked on this exciting journey to create their own home-based business that would allow them to focus on what matters most to them: Family, Gin, and Wildlife.

Nestled on their Upper Sturt property, HillTilly crafts small-batch gins and vodkas using solar power and pure Adelaide Hills spring water. Their signature spirits are made with only the finest ingredients, sourced locally and organically whenever possible, showcasing the flavors of each season.

Since their official establishment in July 2021, HillTilly has been making a mark in the craft distillery scene, frequenting local markets with their stall and offering free tastings to eager visitors. Although they don’t have a cellar door just yet, their warm hospitality and delightful spirits make any encounter with HillTilly Distillery a memorable experience. Ginny Pig Distillery

Craig and Bec, a passionate husband and wife team, are the driving force behind Ginny Pig Distillery. Located in Tooperang on the scenic Fleurieu Peninsula in South Australia, they have transformed their property into an artisanal gin haven.

Former nurses with nearly 50 years of combined experience, their love for gin making emerged as a creative outlet. Inspired by Bec’s obsession with hot cross buns, they embarked on a self-taught journey to master distillation. Their hot cross bun gin became an instant hit among family and friends, and the limited edition Hot X Gin is available from March.

In addition to the Hot X Gin, their Christmas Gin infuses the nostalgia of Grandma’s Christmas pudding and is available from November. The distilling journey started small but blossomed with Bec’s participation in the “Fundamentals of Spirit Production” course at the University of Adelaide.

Their beloved small copper alembic still, Harriett, serves as the starting point for their meticulously crafted recipes. With unwavering dedication and attention to detail, they fine-tune their gins until they meet their high standards. Murphy and Pippa, their faithful distillery dogs, keep watch over the magic.

Ginny Pig’s commitment to quality and artisanal production has earned them recognition, including the “Best Overall” gin award at the San Francisco World Spirit Awards in 2023. Their gins are a testament to their passion and expertise, and they invite you to experience the artistry of Ginny Pig Distillery.
