Headlands Distilling Co. was born in early 2015 when four friends set out to create handcrafted spirits, becoming Wollongong’s first distillery. Despite challenges and setbacks, their dedication to scientific precision, engineering, and perseverance led to success.

Starting with a vision to produce whisky, they patiently barreled the spirit in 2016, while crafting Seacliff Vodka and a range of gins. Sourcing ingredients directly from Riverina region farmers in NSW, they create pristine alcoholic spirits from high-quality Australian grains.

Headlands’ fresh and innovative approach led to the release of new products, including Spirit of the Illawarra Plum and Boobialla gin. In 2020, they proudly unveiled their first Single Malt Whisky, aged in casks seasoned with Seppeltsfield Rare Rich Apera and Rare Muscat. Soon, the world’s first Illawarra Plum cask whisky will grace their collection, aged in ex-Spirit of the Illawarra Plum barrels. Glen Gowrie Distillery, located in Glen Innes, stands out among other gins on the shelf with its unique approach to crafting spirits. They take pride in fermenting and distilling grain-free spirit from vegetables and fruit, including Sebago potatoes, blueberries, and molasses. This small-batch, handcrafted process sets them apart from larger-scale gin-making, as they believe the use of fresh, regionally grown ingredients yields a smooth and subtly nuanced base spirit.

Their fermentation and storage occur in stainless steel tanks, allowing for a hands-on, family-driven operation. The careful fermentation and clarification process takes six to eight weeks, using specific yeasts and modern production systems. The distillation process is conducted using their 200-liter column still named “Cecil,” allowing close monitoring and ensuring the quality of the spirit. Glen Gowrie Distillery takes pride in using glass for production, preserving the natural flavors and colors of the raw materials without adding artificial colors, flavors, or preservatives.
